Can I Use a Different Type of Cucumber?
We use an English cucumber for this recipe, which has a mild sweet flavor, thin delicate skin and crisp texture. You can substitute it with Persian cucumbers, which have a similar flavor and texture. Persian cucumbers, also known as mini cucumbers, are small cucumbers about 5 to 6 inches long. They're commonly sold in packs of six cucumbers in a tray.
How to Thinly Slice Cucumber
Following our step-by-step guide, use a sharp knife to trim away the ends. Thinly slice the cucumber crosswise into rounds. You can also use a mandoline for thinner slices.
Can Cucumber Sandwiches Be Made Ahead?
No, we don't recommend making cucumber sandwiches ahead of time. The moisture from the cucumbers will release and cause the sandwiches to become soggy. It's best to serve cucumber sandwiches the day you make them. You can make the cream cheese mixture ahead and refrigerate it in an airtight container for up to one day.
What Goes Well with Cucumber Sandwiches?
Serve these cucumber sandwiches with your favorite store-bought or homemade potato chips, cauliflower chips, sweet potato chips or beet chips. They also pair well with a chilled soup and chopped salad.

Directions

Stir cream cheese, yogurt, chives, dill and pepper together in a small bowl until well blended. Spread the mixture evenly on one side of each bread slice. Top 1 slice with cucumber slices, then top with the other bread slice, cream cheese-side down. Cut the crusts from the sandwich and cut it in half diagonally.

I had a sandwich similar to this but the bread was sunflower seed and there was a drizzle of ranch dressing.
I thought that the cream cheese / yoghurt seemed quite similar to the M&S cheese and celery sandwich (which unfortunately is made with egg), so I swapped out the cucumber and chopped celery and added cheddar. I reduced the recipe by half (so 1oz; a teaspoon), and it is a good replacement for a sandwich I used to like but won't eat as I have gone off egg. I've not tried it with the cucumber as suggested, but I think it would be nice like that on a cracker instead of in a sandwich - it would give it some bite.
My husband loved this. He somehow thinks that because he's Australian he needs to like British stuff.
I admit never tried this recipe yet. However I have been eating cucumber sandwiches since I was a toddler. Always loved them. I will be trying your spread soon. Sounds great, should taste great. And yes salt is needed to bring out the flavor if the cucumber.
I've always loved toast with cream cheese and cucumber with a generous pinch or two of salt and pepper for flavor - so I knew I'd like this. I swapped out the herbs for green onion and parsley because it's what I had on hand and I added salt to the cheese/yogurt mixture. I also toasted the bread and let it cool a bit before putting the spread on. The real key is you need an English cucumber and sliced fairly thin and I feel it holds up well. I also added salt and pepper to the cucumber layer before topping with the other slice of bread.
I thought the recipe was a good idea, but added a few of my own touches. Added salt to the cream cheese mixture, and also added thinly sliced red bell pepper for color and taste. Used freshly baked pumpernickel (toasted).

Crazy good, and crazy easy. I tripled the recipe and it worked great! I love the crunchy texture, and it’s great on a toasted bagel!
It's a great idea, but like most people said, it needs more flavor. I added salt because salt is always necessary and I added a pinch or 2 of hidden valley ranch seasoning (you know the salad dressing packs you get from the store so you make your own ranch). This made the spread taste really good!
Also, someone suggested toasting the bread. Amazing idea! I used multigrain wheat bread and it made this sandwich the greatest cucumber sandwich I ever had. So yeah, the original recipe probably would not have been that great. The modifications I made made it taste really good!
i have made this twice. a little above average. I used the dill and chives the first time. felt it was missing something. The second time i swapped out the chives with scallion.
I up the flavor a little bit. what it needs is some salt. Not a lot, just for some flavor as the cucumber really is bland. I did enjoy it and will make it again. Keeping the scallions and adding salt to the cucumber. I may put a little spice in it as well for heat. I did use Dave's Superseed breat.
