Set a higher value for ARGILLA_SEARCH_ENGINE_PING_TIMEOUT environment variable

This PR set a value of 120 seconds for ARGILLA_SEARCH_ENGINE_PING_TIMEOUT new environment variable that will be added for Argilla server v2.0.0. This is motivated by some spaces not starting up correctly because Argilla timeouts waiting for Elasticsearch for being available.
